Cause of Flavour
Imparted via poor cleaning in process (CIP) systems – cleaning agent is run through beverage processing systems and it is not effectively removed via rinsing. Contact with raw water, raw material and finished product to the residual cleaning agent will impart medicinal like flavours.
Medicinal like flavours can also be imparted at the consumer delivery level – via poorly cleaned lines at fountains and other dispensary systems.
This can occur in any beverage alcoholic and non-alcoholic alike.
