Cause of Flavour
The geraniol flavour standard helps train professional tasters to recognise the potency of geraniol character. It’s a typical flavour that occurs in beers – imparted from hops (Humulus lupulus) and from hop essential oils.
The amount of geraniol imparted is controlled by the wort boiling, hopping process and fermentation conditions.
This flavour provides floral character to the beer and is generally desirable.
For non-alcoholic beverages this flavour may be imparted via product carryover during bottling changeover processes
