Cause of Flavour
Rancid – Fish Oil is one of several rancid like off-notes that can occur in beer and beverages. This flavour has a rancid, fishy, oily like flavour and is commonly described as cod-liver oil. A off-flavour caused by oxidative rancidity – aging in finished and packaged beers.
Also caused by some cereals and aduncts that contain oils being used in the brewing process.
