Cause of Flavour
Metallic is a common taint that can occur in any beverage that is exposed to metal during it’s processing or transfer / storage of raw materials. Liquids can interact with metal surfaces liberating metal ions and adding a metallic taste to products.
This is a common problem with packaging – metal cans with poor or damaged can linings can taint the product with metallic. A uncommon but does occur issue is for cheap or poor quality plastic caps on metal crimped bottle tops to impart this flavour.
This is an obvious impact flavour and is easily detected by the end consumer. It can also promote oxidation flavours within beverages.
